- Abstract: A single-mechanism theory of the etiology of arteriosclerosis based on high blood levels of homocysteine is described in-depth for the lay person. The theory states that low levels of dietary vitamin B6 in conjunction with high intake of protein can lead to toxic blood levels of homocysteine. Research, leading to the development of the theory, has supported a correlation between high blood levels of homocysteine and low blood levels of vitamin B6 with a high incidence of arteriosclerosis. The metabolic role of vitamin B6 in the occurrence and treatment of the disease is discussed. Dietary implications include: moderating the intake of methionine (the specific protein offender); and maintaining a sufficient intake of vitamin B6. Food charts show the vitamin B6 and methionine contents of many common foods. Because a balance is required between vitamin B6 and methionine, the content ratio of B6/methionine (called the H-value) is given in the chart also. Three diets are analyzed for their B6/methionine contents: typical American, low cholesterol/high protein, and high H-value. Sample menus for one week are included. (cs).
