Summary
  • Abstract: The proceedings of three 1985 regional workshops held in California, Delaware, and Illinois, supported by the USDA, focused on the identification and delineation of the highest priority research needs areas for the USDA and other groups involved in diet and health issues. Five key research recommendations were developed: (1) the determination of physical, chemical, nutritional, microbiological, and sensory properties of foods and ingredients as affected by production, processing, and storage to increase their utilization; (2) the evaluation of nutrient bioavailability as affected by production, processing, storage, and distribution, include the relationship of bioavailibility to nutrient metabolism and nutritional status; (3) the determination of the effect of environmental factors (including physical activity) on nutrient requirements of age groups from infancy to the elderly; (4) the definition of interrelationships among dietary practices, food consumption trends, and nutritional status of population subgroups;
  • And (5) the development of information from agricultural and marine research, food processing and preservation studies, and studies of nutritional relationships to health maintenance that will be of significant value to producers, processors, and consumers. Figures, tables, references, and recommendations are given throughout the text.
