Noted chef and author Ruperto de Nola in his foreword explains that this small format book "offers an opportunity of knowing what really our cuisine is all about. It was never a cuisine of viceregal origin, as the Peruvian or the Mexican, but ours was an excellent homemade, familiar, harmonic, open and simple cuisine, more related to that of the Argentinean northeast or even with the Paraguayan, that can be practiced today in every house -or restaurant, by the way- without major complications and with a certain success" (Our translation)--P. 10.
