Summary
Abstract: A text for the general public advances the thesis that there are numerous shortcomings and areas for improvement in the US food industry concerning food quality, cost reductions, food safety, consumer health protection, and consumer food costs. Topics include: the effects of food processing; food advertizing pressures on the consumer; the proliferation of "new foods" and new food products; the gigantic US food delivery distribution system and its associated problems concerning food storage and stability; the real life business of attempting to effectively manage grocery stores and supermarket chains and its trade-offs; the unwarrented hazards of excessive food additives usage; and perceived benefits reaped by the food industry from actions and inactions of government at all levels. A strategy for consumer action and consumer guidelines for coping with the future are discussed. Literature citations and personal interview comments are given throughout the text. (wz).
