  • Abstract: A reference text for students and practicing professionals concerned with food marketing, economics, and social nutrition focuses on the nutritional value of foods consumed in the Western diet, the manner in which public policy influences food consumption, the myriad of factors (economic, psychological, anthropological, sociological) that affect the food consumer, and the manner in which food suppliers service their commercial markets and view their consumers. The text strives to provide a total picture of the consumer and this food in the Western world. The 13 text chapters, prepared by experts in their respective fields, are grouped among 3 sections. The first section (3 chapters) provides overviews on the impact of public policy on food consumption, comsumption patterns and the way they are changing in industrialized countries, and the relationship between food consumption and public nutritional welfare. The second section (5 chapters).
  • Attempts to convey the contribution of economics, psychology, anthropology, and sociology to food consumer behavior, providing an integrated view of the determinants of food choice. The 5 remaining chapters examine various aspects of the way organizations attempt to identify and satisfy consumer requirements in food products.
