  • Abstract: An authoritative text sponsored by the Commission of the European Communities for federal food and nutrition policy makers, nutrition professionals, and agricultural researchers addresses technological changes in agriculture and the food industry and public policy relative to food production, nutrition, and consumer safety. This report specifically assesses relationships between nutrition and disease, agricultural and food processing practices, food quality and safety, and the food and nutrition policies of a number of developed countries.
  • The text material is organized among 4 principal sections: (1) a critical review and assessment of key nutritional issues and criteria currently being applied for determining the effects of plant, animal, and marine foods on human health; (2) a detailed re view and assessment of food and nutrition policies; (3) an examination of agricultural production and food processing technologies relative to their potential effect on human health and consumer attitudes; and (4) a summary of 45 conclusions and recommendations. The first 3 sections of the text include ca. 600 reference citations, and illustrations and numerous data tables are provided in the first 2 chapters.
