- Summary
- Sugar is one of the world's most important agricultural commodities. Despite the fact that a substantial part of production is consumed domestically, it remains a major trade item. Not only is it a leading, and in some cases crucial source of foreign exchange for exporting countries, but its cultivation is a substantial source of employment, particularly in the developing world. The fortunes of the sugar industry thus have a crucial bearing upon the broader economic, social and political issues in many of the producing countries. In the consuming countries, sugar's role as a popular foodstuff is the diet of the population of developed and developing markets alike, and as a major ingredient in the food and drinks manufacturing industries, ensures that it is almost universally never far away from the public, business or political eye.
